This entails the commitment of all actors of the
finished product manufacturing:
BREEDING
Dozens of thousand of selected breeds from pig-farms
directly controlled by the Company. Safe and exclusively
natural feeding of animals is essential to obtain good
meats: grains, soya, corn etc..
SLAUGHTERING
Slaughtering is done only on animals which have reached
a suitable age and under the constant monitoring of
the veterinary service, following a strict self-certification
protocol, in compliance with the most severe hygienic-sanitary
standards.
PROCESSING
The delicate processing phases, from the selection of
meats to salting and fat coating, although taking place
in futurist plants - within a state-of-the-art technological
context - follow century old rules and are entrusted
to the mans experience and sensitivity.
SEASONING
Hills around Parma and the very special area of the
San Daniele, in the Friuli region, have always been
ideal microclimates for ham seasoning. Such unique natural
environments as well as the long passing of time are
the secret of two different delicate and excellent hams.
